This restaurant has mastered the art of preparing Hidalgo-style barbacoa (oven-baked mutton slow-cooked over mesquite). The family has been in the barbacoa biz for nearly four decades; its Mexico City restaurant has been going strong for 15 years. Most people order the barbacoa tacos and the consommé. Wash it all down with a potent glass of pulque (the fresh, pre-tequila, semi-fermented mulch from the heart of the agave plant).

In the ground floor of the Centro Histórico Sheraton across Juárez from the elegant Alameda, this upscale venue concentrates on food over surroundings (you could be in any luxury hotel in any city), and how. Representing a wide array of local Mexican cuisines, the chef nevertheless winds up concentrating on Oaxacan, the most elaborate. An essential breakfast, lunch, dinner, or snack stop downtown, this Mexican classic has been rewarding the hungry since it opened in 1912 in a section of an old convent. At the entrance to the main dining room are huge 18th-century oil paintings depicting the invention of mole poblano, a complex sauce with a variety of chilies and chocolate that was created by the nuns in the Santa Rosa Convent of Puebla. A student group dressed in medieval capes and hats serenades clients Wednesday through Sunday from 3 to 11.

The menu here makes use of many native foods and spices, to present a more elaborate regional cooking than the usual offerings at Yucatecan restaurants — and it was about time for someone to show a little creativity with such an interesting palette of tastes. Excellent examples are a cream of chaya (a native leafy vegetable) and an xcatic chili stuffed with cochinita pibil. I also like the classic Mexican-style fruit salad with lime juice and dried powdered chili. There are several seafood dishes; the ones I had were fresh and well prepared.
